Use too many Reapers and all you’ll be thinking is “Who drove that nail through my tongue?” Besides, it was all too predictable to make a crazy hot sauce from the world’s hottest chilli. How come? Well, like all of our sauces, the taste has to be the overriding factor. So yeah, it’s a hot one one of our hottest yet not the hottest. This sticky sauce makes the perfect marinade for all types of dishes, an indispensable addition to stir-frys or pulled pork recipes, or – well, use your imagination… Thick, rich but not over-sweet, first up you get the silkiness of the honey, followed by a mellow hit of gently fried garlic, the tang of dark soy sauce and rice wine vinegar, then an almost imperceptible build of heat from the Carolina Reapers.
